Maillard Bros. started because Theo and Sam Maillard could not stop arguing about crust. Theo wanted his patties crusted to the point of fracture; Sam thought a little give was a virtue.

They settled it the only honest way: a flat-top in a borrowed garage, a scale, and a notebook where they scored every patty on its sear from zero to ten. The notebook became the crust index. The garage became a window.

Five years later they still argue, still scrape every patty by hand, and still refuse to serve anything under a six. The name is a chemistry joke that happens to be their surname, which they take as proof they were born for this.

Char is not a defect here. It is the whole point.
